The Entre-deux-Mers wine celebrated between friends and food !


The Entre-Deux-Mers is a fruity, elegant, tasty wine with a beautiful pale golden colour. It is often drunk young. Served at around 10° it accompanies perfectly the pleasures of the table.
For an aperitif, it refreshes the palate and opens the appetite. it accompanies well "charcuterie", white meat and goat cheeses.
It is perfect for fish and sea-food. The freshness of the wine uplifts the iode taste and softens the salt produced by the sea.

  • Rub the garlic onto the slightly toasted bread.
  • Mix in a bowl the tomatoes, the anchovies cut in half, the chives, olive oil, salt and pepper.
  • Before taking your aperitif, spread this paste onto the bread.
Cocktail snack :

Bread with tomatoes and anchovies

Ingredients
24 pieces of sliced baguette of 4 x 1 cm
12 anchovies, raw or in oil
3 tomatoes, seeded and skinless
1 clove of garlic
Chives finely chopped up
Salt, pepper

Starter :

Avocado with sesame, grapefruit and mint

Ingredients
2 big avocados
Juice from one lemon
2 grapefruits seeddless and cut up
1 soup spoon of chopped mint
1 small lettuce
2 soup spoons of sesame seed
A few twigs of mint

Serves : 4

  • Peel the avocados, cut them length wise and take out the stone.
  • Cut the avocado into slices and put them in a salad bowl with the lemon juice over them.
  • Add the grapefruit, the mint and mix gently.
  • Place the lettuce leaves on the plates. Share out the avocado salad and sprinkle with the sesame seeds.
  • Decorate with the mint leaves.

  • Chop the vegetables, keep just the leaves of the sorrel.
  • Place your minced vegetables on the bottom of of big cooking pot. Empty and scale the alose before laying it on the vegetable mince. Cover the fish with the ham.
  • Water your preparation with a glass of Entre-Deux-Mers wine and water. Salt, pepper and add the laurel leaves. Cover and let it cook on a very slow flame for 2 1/2 hours.
  • Serve very hot.

Alose with Entre-Deux-Mers white wine

Ingredients
1 kg of alose
250 g of carrots
1 lettuce
500 g of tomatoes
250 g of sorrel
200 g of oignons
200 g of smoked ham from Bayonne
1 dl of Entre-Deux-Mers wine
1dl of water
Laurel leaves
Salt and pepper
